Moonlight Meadery Wild Honey

Heather blossom honey from Northern Scotland, it’s earthy, deep and dank.. think how you can taste honey in a dish, well multiply that by 10, the blueberries are the small tiny berries that grow wild in New England, we use almost 4 lbs per gallon. This is a dry mead, while the honey is aggressively floral and present in the flavor it’s tart, almost like a lambic. If the honey isn’t as assertive well you are back to the version we make with Wildflower honey. it’s a softer more gentle approach. We suggest pairing with a triple cream brie.
